
Vegan chili. A variation on the traditional with all the same flavor!
3 Bean 2 Pepper Skillet Chili
Prep time 10 minutes |Cook time 20 minutes |Serves 8
1 Organic extra firm pound tofu loosely crumbled
1 8oz can organic pinto beans
1 8oz can organic black beans
1 8 oz can organic red beans
1 28 oz can organic diced tomatoes
1 Small organic onion, finely diced
4 Cloves organic garlic, minced
½ Cup safflower oil
¼ Cup soy sauce
2 Organic jalapeno peppers, minced and seeded
1 Organic bell pepper, finely diced
2 Tablespoons rubbed sage
1 Tablespoon basil leaf
1 Teaspoon organic crushed chili peppers
½ Cup chili powder
¼ Cup cumin powder
1 Cup vegetable stock
1 Tablespoon sea salt
Method:
Step oneIn a medium stock pot over medium high flame preheat oil, once oil is hot and shimmering, add tofu, cook until tofu browns and becomes crispy (but not burned) stirring from underneath to prevent sticking.
Step Two: Add herbs, and veggies to the pot, sauté the mixture stirring from underneath mixing all the ingredients together until the onions become translucent, 3-5 mnutes. Add beans, tomatoes and vegetable stock, stir all together cover pot and reduce flame to a low simmering flame, allow to cook until the flavor you smell is through the veggies and tofu, about 30 minutes, salt to taste.































Hi, Ayinde! I made your "Meatless Chili" last night. Loved it! Thanks for sharing the recipe. I did modify it a bit, and was told that you wanted to know how I changed it: (1) used only low-salt/no-salt beans, and even these I rinsed with water before using. (2) added 2 Tbsp curry powder to the spices (3) added contents of 1-6oz can tomato paste
Also, like most chilis and stews, it tastes even better the day after it is cooked!

Also… I did substitute tempeh for tofu and I omitted the sea salt….(personal preference)
