Believe it or not, summer is winding down – it will soon be goodbye, sweet beach vacations, and hello, cooler fall temperatures. How can we squeeze every last drop out of the remaining days of summer? One tactic: keep your food summery for as long as you can!
Summer fruits are still in season in your local grocery stores, and, to make sure I’m getting my maximum time with that summer feeling, I often try to add in tropical fruits to my dinner dishes in the last few weeks of summer.
Here are some of my favorite summer fruits for incorporation into late-summer meals:
Reminiscent of Hawaiian shores and incredibly juicy, pineapple tops my list for favorite summer fruit. Some of my favorite pineapple recipes include Ayinde’s Hawaiian “Sausage” Pizza with juicy pineapple chunks and the always-scrumptious Pineapple Fried Rice. When eating these recipes, how could you not think about little umbrella drinks?
Apricots are one of the absolute best summer fruits, and they taste great when simply “smashed” over a plate of veggies. I like to mix apricots with a small amount (about a tablespoon) of soy sauce as a quick and zesty topping for brown rice or noodle dishes. This fresh apricot pasta salad looks pretty delish, too!
Melons in all forms will keep your mind on summer time long into the fall months, but watermelon probably tops them all – check out this awesome recipe for watermelon salsa, which is just amazing with chips or over steamed veggies. One bite of this stuff, and you’ll be back at your 4th of July party in no time.
