Wellness Wednesday: Five Ways to Experience Pumpkin This Fall.

By Callie McBride

Pumpkin. Once it hits October, they’re everywhere. You really can’t escape them. But why would you even try to!? Pumpkin is quite possibly the over-arching symbol of fall in terms of decor, food, activities, and even halloween costumes. Embrace it, people. It’s here to stay.

Five Ways To Experience Pumpkin This Fall:

1.) Pumpkin Cranberry Mousse with Sunflower Seed Brittle from Angelica Kitchen

Creamy, rich, incredibly flavorful…the only problem? I made the mistake of sharing one. Not next time.

2.) Pumpkin Pie Ice Cream from Stogo.

I wanted to try this so badly, I ate in in the pouring rain at 10pm on a chilly Sunday night. Totally worth the brain freeze. (pictured alongside Salted Caramel Pecan, equally as mindblowing)

3.) Pumpkin Cupcake from Babycakes NYC.

Yes, yes I did eat this cupcake in the same sitting as the aforementioned ice cream. No, no guilt whatsoever. Vegan = healthy = free pass to turn into the cookie monster!

4.) Trader Joe’s Pumpkin Bread & Muffin Mix.

Substitute the eggs for flaxeggs. I wonder if mashed banana would also work? These will be made for a Breast Cancer Awareness Bake Sale at my school next weekend; if you make them to simply transfer them to your mouth, that works too.

5. Mini Pumpkin, any NYC streetside fruit stand.

Apple Pie-scented candle not included, but strongly suggested. You will automatically feel better when burning the candle and staring at the pumpkin. Trust me, I did it…

Editors note:

No, your eyes are not deceiving you-we are trying something new on wednesdays.  Weight Loss Wednesday will be in addition to Wellness Wednesday, where we hope to focus more on ways to live more healthy, more happy, and still wholly vegan. If weight loss is a central thought in our daily lives, it’s bound to fall into a slump; we aren’t all superheroes with abs of steel…so should we really be constantly chasing that!? Lately, we’ve thought no. Being healthy is just as wonderful {if not better?} than existing in a state of constant dieting and exercising. Fall is here, which always brings lighter moods, cheery outlooks, and delicious seasonal food. Here’s to health and happiness…stay well!

We’d love your feedback!
