These are not your every day waffles. These are the kind you bring home to Mama. Seriously, if waffles had fingers…I’d put a ring on this one. So, with that said, go forth and make these bad girls. CHOCOLATE CHIP BROWNIE WAFFLES W/ DRIED CHERRIES & WALNUTS
1 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 tablespoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup non-dairy milk
2 tablespoons water
2 tablespoons + 2 teaspoons vegetable oil
1/3 cup sugar
1 teaspoon vanilla extract
1/4 cup vegan semisweet chocolate chips
1/4 cup dried cherries, chopped*
1/3 walnuts, chopped *
non-stick cooking spray
*You can totally sub or omit these to suit your dietary needs, preferences etc. Hazelnuts or macadamia nuts would be crazy good too!
Mix flour through salt in a large bowl.
In a separate bowl, whisk milk, water, oil, sugar and vanilla.
Pour the wet ingredients into the dry and mix together, if too thick, add a small amount of milk. Fold in chocolate chips, nuts and cherries, but avoid overmixing.
Pour into waffle maker and cook according to your waffle maker’s instructions. Mine are finished when the waffle maker stops steaming.
To make brownie batter sauce, reserve a bit of batter and thin it out with a few sprinkles of milk. If you like licking the bowl when making brownies, you’ll love it! If not, sprinkle with powdered sugar and call it a day…lol!
