Meatless Monday: Creamy Raw Tomato Soup

My friend’s mother was lamenting about her tomato harvest. Apparently, this year she had way more than she could handle. Since we only have a couple more weeks of tomato session here in N.Y., I figured I’d take some off her hands and enjoy them in the simplest way possible…a raw soup! It’s a great way to take advantage of some fresh, crusty bread if your lucky enough to have some hanging around…it’s also an excellent way to detox from all the overindulgence of Labor Day Weekend! Enjoy :-)

RAW Creamy Tomato & Spinach Soup
(Serves 1-2)

Feel free to tinker with the recipe to suit your tastes!

INGREDIENTS

1/2 cup raw almonds (soaking optional, but will give creamiest results)
1/2 cup of hot water, from the tap, not boiling
2 cups of chopped tomatoes
1-2 tsp garlic olive oil
1 tsp of mixed Italian herbs
salt and pepper to taste

1 big handful of baby spinach, chopped

METHOD

In blender, combine almonds and hot water until creamy
Add remaining ingredients up to salt and pepper
Sure in chopped spinach, and serve immediately

  1. Since my tomatoes have all come down with a wilt, will have to buy some at the farmers’ market and give this a try. I made a great cream sauce the other day using cashews and it was amazing.
