Oops. I totally missed the memo about your New Year’s resolutions. Actually, I did get a few, but I burned them. Truth is, I’m much more inclined to support more moderate lifestyle changes. Nixing all the sugar, fat, and fun out of your diet doesn’t sound too sustainable to me. So, in the spirit of moderation, I present you with this mini batch of brownies. Perfect for portion control if you’re like me and can’t keep your hands out of the pan once they’re done! The recipe makes at least four generous sized brownies. Enjoy!
1/2 cup self rising flour
6 tbsp sugar
6 tbsp cocoa powder
1/2 tsp vanilla extract (optional)
1/2 tsp salt
4 tbsp water
4 tbsp oil (I prefer coconut)
1 tsp instant coffee granules (optional)
Preheat oven to 350 degrees
Grease a small baking dish (mine was about 3.5 x 6)
Mix together all ingredients
Scoop into the dish and smooth the top over
Bake for 25-30 minutes, or until there is only a bit of chocolate goo on a toothpick dipped in the center. I’d advise that you keep them slightly underdone for maximum fudginess!
