Meatless Monday: The Sexiest Vegan Valentine’s Dishes

Valentine’s day is a-comin’ whether you love it or hate it. While I will be separated from my valentine by the Atlantic Ocean this year, I still love a good holiday, especially one that’s celebrated with copious amounts of chocolate. And if you don’t have a special someone, that’s just fine, because you’re special enough on your own. With these recipes, you can skip out on the jacked up V-Day restaurant “deals,” and serve up some home-cooked treats that are certainly “made with love.” xoxoxox

Breakfast in Bed

Nothing says, “I love you,” like waking up an hour early to be able to whip up a surprise breakfast for your groggy, maybe grumpy, significant other. If you look on the bright side, you will get to reap the benefits of this delicious breakfast too, so pick something that is worth the trouble!

There’s this Brownie Waffle, which really needs no further explanation…

Are you the fancy, overachieving type? Why not wow your valentine with a stack of these Strawberry Shortcakes w/ Coconut Whipped Cream?!

Gluten-Free lovebirds? Try these GF Asparagus and Mushroom Crepes. For a sweet twist, you could swap the veggies for chocolate and berries or the fruit of your choice!

Seductive Starters

Feeding each other is so sexy, right? Especially when your honey drips hot, cheesy goo down the front of the fancy dress that you bought especially for V-Day, and you kept the tag on so you could return it tomorrow, but now that plan is shot to hell….(giggle)

For those of you who would like to feed each other and avoid disaster, I recommend sweats and tees…and these vegan fondues! There’s a potato-based “Blonde Bliss” variety, a Daiya-cashew-tofu hybrid Beer Cheese Fondue, and the ultimate Gruyere Fondue, by the vegan cheese queen Miyoko Schinner, that’s sure to knock socks (or other attire) all the way off!

Enticing Entrees

I think V-Day dinners should either be suitable to make ahead of time or simple enough to whip together on the day, so that you are not wasting your whole evening in the kitchen! Like these a-freaking-dorable Heart-Shaped Ravioli w/ Spinach Filling.

Finger foods are also high on my list of favorites. How about this Roasted Potato and Asparagus Pizza? Bonus: Asparagus is a natural aphrodisiac ;0)

Since we’re talking asaparagus, I couldn’t help but to share this even easier recipe for an Asparagus and White Bean Pesto Tart, which is composed of super easy supermarket ingredients (especially if you have a Whole Foods nearby) and can be whipped up for a last minute dinner date. Pair it with a salad and you’re set!

I haven’t forgotten about my overachievers. If a labor of love is what you’re after, why not try a Vegan Sushi platter?

This raw masterpiece, a Lemon and Fig Cheesecake, can be made a couple of days ahead. Figs also have a reputation of inciting friskiness…so only serve this if you’re ready for the repercussions!

Brownies are the quintessential Valentine’s Day dessert, no? These Small Batch Brownies make enough for you and a plus one (or just you!) with the added benefit of not having a tray of leftover brownies beckoning you for the rest of the week (or just tomorrow…you greedy thing, you!)

Titillating Tipples

For me, the perfect cocktail is deceptively sweet. Like those pina coladas you get on beach resorts. You don’t even taste the alcohol, and then the next thing you know…surfboard!

This Champagne Sorbet is a cocktail and dessert all in one!

If you are on the east coast, you will appreciate this Ultimate Hot Chocolate right about now. It’s super rich and spiked with Kahlua, but if you’re straight edge, skip it and you’ll still be in chocolatey heaven.

The name of this punch, Hop, Skip and Go Naked, pretty much sums up the ideal Valentine’s Day. Don’t overthink it or take things too seriously. Instead, take a moment to share some love, self-love included, and indulge a bit with no regrets. Cheers!
