Meatless Mondays: 5 Spring-tacular Vegan Recipes!

Spring is in the air! ::happy dance::

This year, I want to take better advantage of local, seasonal produce. These recipes do just that. I think I’ll do my spring cleaning this weekend and reward myself with a feast…who’s with me??

This simple, yet inventive, pesto is perfect to have on hand when you don’t feel like cooking a big meal, or for unexpected dinner guests. Toss with pasta or put a big dollop on your baked potato!

I used to loathe green peas…until I had them in a curry. This one is spicy and rich with coconut. Plus it only takes about fifteen minutes to cook!

Warmer weather makes the perfect backdrop to a raw food reboot. This recipe will certainly come in handy. It’s also great for anyone looking from some workout fuel or a guilt free dessert!

Asparagus is one of my favorite veggies. Roasted, in a soup, in a stir fry…I’ll take it however I can get it! This recipe makes for an elegant presentation. Perfect for a spring brunch.

We’ll end things on a sweet note. Rhubarb doesn’t get enough play, if you ask me. This cheesecake is gorgeous and bright and perfectly springtimey. The sweet-tart delicious rhubarb gets to be the star.
