Meatless Monday: 14 Mouthwatering Vegan Avocado Recipes

Every now and then, I encounter someone who doesn’t like avocados. I smile sweetly, then proceed to back away slowly until I can break into a full sprint. After all, those mofos are CRAZY! (I kiddd…I kid!)

I mean, very few of us need to be schooled on the myriad of health benefits that come along with eating avocados. Tons of vitamins that keep our hearts healthy and our eyes strong…antioxidants to fight against free radicals and stuff. Plus fiber and good fats (I promise!) which help to stabilize our blood sugar.

For these reasons and more, it would serve us well to eat more of the creamy green stuff, but, let’s face it…no wo(man) can live on guac alone! So, I present you with some of the most creative recipes that feature the almighty avocado. Enjoy!

    Yum, my son has never liked avocados I tried to give it to him mashed up as a baby but he refused it every time. Now that he is five and still refuses I slip it into his chocolate pudding/mousse, sauces, smoothies and dips hummus.Thanks
