Foodie Tues: Vegan No Bake Protein and Energy Bites!

 

Hello! My name is April and I will be taking over Foodie Tuesdays for the magnificent Lindsay who formerly wrote this column.  I’m not quite as sarcastic as our former foodie face, but I do immensely enjoy puns and will be sticking them in and around my articles as much as possible.

I was so excited to write my first Foodie Tuesday column that I almost couldn’t decided which recipe to use, but then I was inspired by a co-worker of mine.  As a part time server and bartender, I am surrounded by creative foods and drinks that often give me ideas for my own delicious concoctions.  We had just finished a rush when it happened: she pulled out a ball of nutty, flaxy, protein that looked to me like it had just fallen from heaven.  And the best part is, you don’t even have to really cook to make them! It really is a vegan foodie’s dream come true.

Since I have now thoroughly introduced myself, I should probably get to this awesome recipe about now.

Vegan No Bake Protein Balls: Perfect for Work, Work-Outs, or Anytime at All.

You will need:

1 Cup (dry) rolled oats or oatmeal

 

½ Cup dark chocolate chips or chunks

 

½ Cup Almond or Peanut Butter (best if you can get to a health food store that has their own almond or peanut butter machine because it makes it thicker)

 

½ Cup Organic Flaxseed

1/3 Cup Agave Nectar

1 teaspoon of vanilla

and an APPETITE FOR DELIGHT! These are going to make your life so much better.

METHOD:

1. Mix oats, almond butter, flax seeds, dark chocolate, vanilla and agave in a medium sized bowl.

 

2. Once the mixture has thickened, use a spoon to carve out 1″ balls and place on a plate.

 

3. Place the balls in the fridge for a half hour to harden.

 

4. ENJOY!

 

These magnificent little bundles of energy make me oh-so-very happy and I hope you enjoy them as much as I do!
