Meatless Monday: 13 Vegan Recipes To Help You Tackle Your Summer CSA Veggies

Are you one of the growing number of people who participates in a farm share or community supported agriculture (CSA) scheme? If so, you may have suffered from the same state of intense confusion and persistent indecision that I have when presented with a bag of random vegetables. I mean, there’s usually the standard greens, potato, carrot combo…so that shouldn’t be too daunting. But even then, I’m usually so torn over what to do with them that I wind up just throwing the lot into a soup or something and then feeling mildly disappointed, albeit full…hehe.

So, in an effort to rescue my palate, as well as yours, I have put together a few summer recipes to keep your dinner plate exciting. After all, you’re doing your part to save the planet, and you deserve to be rewarded!
