Meatless Mondays: 11 Vegan Pie Recipes To Make Your Summer Extra Sweet

Ahh…Pie…no other dish leaves me feeling quite so domestic when I make it. Summertime creates a bit of a dilemma when it comes to pie-making. On the one hand, there are a bazillion summer fruits that are just begging to be baked inside a nice flaky, vegan buttery crust. On the other, sometimes it’s so hot that turning on the oven could be considered a criminal offense.
