Tofu & Basil Pesto Panini
- 1/2 pound tofu (frozen and defrosted)
- 2 tablespoons cooking oil
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dry thyme leaves
- 1 tablespoon soy sauce
- 1/4 cup spring water
- Salt and pepper
- Ezekiel bread
- Sliced red onion
- Sliced tomato
- Your favorite vegan cheese
Vegan butter for both sides of the bread.
In a medium skillet over medium high heat, heat oil until hot and shimmering play slices of tofu into oil and cook until browned on both sides. Season tofu with herbs and spices. Then add water and soy sauce cook until water reduces.
To build sandwich: butter both sides of bread, cover bread with pesto, add tofu, onions, tomatoes topped with cheese pesto on top side of bread and close.
In a skillet over Medium heat place sandwich cheese side down and cover with spatula or foil pressed down with either a heavy block or a saucepot.
Be sure your skillet is on medium heat as it will need to cook the bread without burning press on both sides for approximately two minutes each and serve when done.
