This past week on the road seemed like at least a month. The bus on the road is a grind that I left back in 2007. Stepping onto it again was an interesting blast from the past and ironically the very same top bunk I slept in was left for me right in the back. The standard logic on a tour bus is that it’s safest to sleep on the bottom just in case the bus happens to roll. But, if you are the last one on the bus, you are left with the top bunk. If you haven’t been swept up in the jackfruit craze, sit tight, it will engulf you soon. This versatile fruit has long been used as a meat substitute in Southeast Asian recipes. It has a meaty texture that is reminiscent of pulled chicken or pork when broken apart. The trick is to buy a can of the unripe fruit, canned in water or brine ONLY, rinse, season and make it saucy!
