My Meatless Life: Cabbage Rolls and Tour Bus Woes.
This past week on the road seemed like at least a month. The bus on the road is a grind that I left back in 2007. Stepping onto it again was an interesting blast from the past and ironically the very same top bunk I slept in was left for me right in the back. The standard logic on a tour bus is that it’s safest to sleep on the bottom just in case the bus happens to roll. But, if you are the last one on the bus, you are left with the top bunk. I learned to like it up here, you know, life on the edge. Continue reading

Meatless Monday: Chipotle Jackfruit Arepas
If you haven’t been swept up in the jackfruit craze, sit tight, it will engulf you soon. This versatile fruit has long been used as a meat substitute in Southeast Asian recipes. It has a meaty texture that is reminiscent of pulled chicken or pork when broken apart. The trick is to buy a can of the unripe fruit, canned in water or brine ONLY, rinse, season and make it saucy! If you’re watching your waistline, an entire can is only about 60 calories, so this is definitely a perfect summer option! Continue reading
Meatless Monday: Apple Crisp
By oneveganfatty
Apple crisp is one of those anytime desserts. Most of us have all the ingredients in our pantry and it’s ready in minutes. If you have cute little ramekins, you can make single portions and serve to dinner guests…they’ll think you’re super fancy. I shouldn’t even have to tell you this, but if you make it “a la mode,” they’ll call you a hero! Enjoy! Continue reading

Meatless Monday: Gluten free Waffles
I’m guilty of being “anti-GF” at times. I chalk it up to too many disappointments in the past. Grainy cookies, chalky brownies, dry cakes…I’ve tried it all, but these? These are delightful. A bit of a lighter texture than the usual wheaty waffle, but it’s a welcome difference. Try these this weekend…smother them with fruit and agave, and if you really like yourself, mix up a mimosa to go with them! Continue reading
Weight Loss Wednesday: Strange Kale Love
love kale. (I know every vegan says that!) However, it’s easily one of my favorite foods. But we haven’t always had this relationship. Up until I went vegan four years ago, I had no idea what kale was. Just had never heard of it. Continue reading
Weight Loss Wednesday
We all know the drill. You get to work or school and spend the first hour struggling to keep your eyes open and trying with all of your might to wake up. I know that feeling all too well. Stumbling on to the bus with one eye open, sleeping until my stop, and then scrounging for a cup of coffee (which I don’t even like!) to turn me into a semi-conscious worker (or student, depending on the day). Continue reading
